Three generations.
One family orchard.
Hayashi Kakien has grown persimmons for three generations in Mizuho, the birthplace of the Fuyu persimmon. Today, we also grow figs and Tokuro ginkgo nuts.
We start by looking closely at the soil and trees. Each orchard, each crop and each season calls for its own care.
Fresh fruit is only the beginning. Our monaka ice desserts, gelato and fruit ingredients offer other ways to enjoy what we grow.

We check soil pH and consider the balance of nutrients, using compost and adjusting our approach to the condition of each orchard.
Daily observations guide our decisions. We also learn from research in Japanese, English and Chinese, and use rainfall and temperature records to inform our work. We assess these ideas against the conditions in our own fields.
